The Grilled Cheeserie opens its brick-and-mortar restaurant today at 11 a.m. in Hillsboro Village.

The popular food truck known for its seriously delicious gourmet grilled cheese sandwiches will swing open the doors to The Grilled Cheeserie Melt Shop at 2003 Belcourt Ave.

Housed inside the former Sunset Grill space, the new restaurant features a larger menu with snack items such as tater tots and cheesy tots, specialty melt sandwiches, soups and salads as well as a specialty milkshake menu (yes, please).

The award-winning food truck was created by the husband and wife team of Joseph Bogan and Crystal De Luna-Bogan.

“It’s a space that collectively came together with a lot of local efforts,” said Crystal De Luna-Bogan. “When you wait six years (to open a restaurant) there are definitely expectations and we’ve gotten some really great feedback so far, which is great to hear.”

The Grilled Cheeserie will be open everyday from 11 a.m. to 9 p.m. and shares its space with a new Juice Bar as well as Biscuit Love, which is expected to open soon.

Joseph Bogan said the wait has been worth it, especially since the restaurant now gets to call Hillsboro Village home.

“We really did grow at our own pace, so we never compromised our product,” said Joseph Bogan. “We’re just pumped to be here and I think it’s going to be a great little food hub.”
